Sometimes you need a biscuit. And, of course, extra points are earned if the recipe for said biscuit calls for ingredients that you already have in your pantry. And again if you aren’t going to gain five pounds just peeking at the final product.
Enter these little Golden Flax Shortcakes.
Just enough salty and just enough sweet, these shortcakes are aptly named for they call for ground golden flax seed instead of eggs. And, of course, these are truly my own because they contain both spelt flour and unbleached white flour and a smidge of turbinado sugar. Use them beneath a summer fruit salad, ice cream, or any other place where a buttery, light oh-so-good bit of shortcake fits the bill.
