I’ve been dreaming of making this pie all summer.
The inspiration came in the early months, when the cravings for s’mores and campfires were high and didn’t stop. I took notes on it as the warmest months of the year flew past (would it be a nut crust or graham? Coconut cream? Would there be dried fruits? Do there HAVE to be dried fruits if it’s a trail mix pie?) but try as I might, I never seemed to be able to find the time – with a new baby in the house – to tinker and bring it to life.
But ya know, it’s sort of perfect that this week I finally found the time to put all of those ideas into action because I really wanted to make something special, decadent, and special-diet friendly for dessert this holiday and now I’m pretty sure I’ll be making this pie for everything always. It’s so creamy, decadent and yet light and soul-satisfying. I’m absolutely in love with this pie!
You may be asking. Well, there isn’t any trail mix actually IN the pie. But when I close my eyes and think of my favorite gorp bags, I think of crunchy nuts, almost melted chunks of chocolate, flakes of toasted coconut, NO DRIED FRUITS, and maybe some graham cracker pieces too. I don’t even leave the house to go downtown without dates, so of course they’d be on the trail with me. The inspiration for this pie did come from trail mix, but maybe not because of the trail but for the way that all of the ingredients seem to come together just perfectly when you pull them from your pack, in the middle of the wild. The comfort of simplicity keeping your company as you listen to the birds, admire the trees and bask in the sun. That’s what I want this pie to be.
The holidays can be so rife with stress, but I hope that this pie is a surprising little respite amidst it all. A nourishing dessert that’s decadent too, that meets everyone’s needs and surprises those with no apparent “needs” at all. It comes together easily, is beautiful to slice and serve, and if you ate it for breakfast the next day (honestly) there would honestly be something holistic about your choice.
There aren’t any eggs to be found in this pie, and no dairy. There isn’t any refined sugar either. But there are a whole lot of beautiful, body-loving ingredients that every guest at your dinner table will love. And this pie won’t put you into an immediate coma, not even after all of the holiday dishes have been cleared and merriment made.
