I have a few birthday rituals.
One is that I celebrate (in small, sometimes unseen ways) for as many days as I’m turning years. Another is that I make myself a birthday cake somewhere in that timeframe.
This has been an absolute favorite. And this too. There aren’t any rules about the birthday cake having to be a *cake* though, which is where this Ritual Chocolate Ganache Tart in Spiced Hazelnut Crust came in.
Over the past few months, we’ve had to be very careful about major allergens in our home cooking. Eggs, dairy, wheat and gluten, soy and peanuts have all been removed to help little Leo’s immune system calm down. We’ve navigated with a good bit of ease, but making a birthday cake without any of those things leaves a little something to be desired, if I can be very honest. But this rich, refined-sugar free chocolate ganache is a homerun. It’s free of gluten, dairy and grains as well; it’s a silky, decadent ganache cradled in a richly nutty, strikingly simple hazelnut crust; densely rich in the way that a grown-ass woman’s birthday cake should be.
…is ridiculously easy to pull off. You’ll need just 10 pantry ingredients that you likely already have, with the exception of hazelnut flour. This you can find at a well-stocked grocery store or online via the link in the recipe ingredients. The steps are easy; make yourself a simple press-in crust, bake it, fill it with a one-step ganache and then bring the patience. This, you’ll need a good bit of because you need the tart to set up completely. I like to speed things along in the fridge or freezer, and encourage you to do the same….just be sure you give a little time for the tart to come to room temp before you cut it so you avoid cracks.
