Jump to RecipeIt might come as a surprise that I don’t spend very much time on social media, perusing. Scrolling just isn’t something I have time to do and the hustle is so real most days. But whenever I’ve been on these platforms recently, an “influencer” pops up showing “practical meal ideas,” or “practical holistic nutrition,” and it’s always a microwave meal, or a lame-sauce bowl that looks like it came off of the saddest salad bar in the country. Or, it’s basically an amalgamation of snacks that all came out of boxes. I’m sorry, my friends – a handful of pretzels, a few olives and a nibble of cheese does NOT a meal make. And, if I may say so, if this is the way that we’re nourishing ourselves “practically,” than what ARE we doing with the rest of our time?
My husband Pete likes to ground me. To remind me that not everyone spends as much time in the kitchen as much as I do. That it’s not valuable to everyone, and it’s not possible for most, and I know he’s right. But to be super honest, most days and nights I don’t have time to cook either (!!) There! I said it! But, I’m still determined to put more than olives in our bellies, to nourish our lives and fuel our daily adventures with something wholesome, mostly-homemade, never sad and truly delicious. And, 99% of the time, I make that happen…with the help of some sneaky recipes (ok, more like “formulas”) like this Cheater’s Chicken + Rice Noodle Soup.
