I simply swapped in some chopped chocolate for the crystallized ginger in the recipe and BAM. I can’t wait to eat these cookies all year long. Definitely don’t forget the part where you punch a little piece of chocolate through the top of the just-baked cookie – it gives that gooey goodness we all need more of in our lives.
