This easy recipe for chapati – a simple, sesame-studded, whole-grain, unleavened flatbread – is a staple in Ayurvedic kitchens, in modern and historic times. Wheat – and specifically these chapati – soothe vata and pitta doshas, and for this reason, whole grain wheat is a wonderful choice for pitta and vata types as a carbohydrate source through the winter and spring, when kapha is likely to climb in the body and our metabolism is strongest.

I love making these quick little chapati alongside the Coconut + Cauliflower Red Lentil Dal, Beet Falafel, soups and stews all winter long but they would also be amazing as a substitute for toast at breakfast.
