There are lots of things that can persuade us not to cook.
Coming home from a big trip, for one.
Lack of time, for one. Lack of ingredients, another. Lack of motivation – for sure.
Then there’s also the fear of messing up.
But this Easy-Peasy Rotisserie Chicken Pot Pie was the first thing that I made when I got home from California because it was the fastest way to mainline that homey feeling into my belly, I could grab all the ingredients quick-like on my way literally from the highway to the front door, and all I could think about was cutting into that flaky, golden crust. Daymn. And now all of that is yours.
Now I am determined in my life to be the person that reminds you, inspires you (nay, guilts you? no no no) into cooking for yourself because it’s the best way for you to take care of yourself, and others, and thusly to be your best self in the world. And so when I create said recipes – instruction manuals so to speak – for how you can do-what-I-do, enjoy-what-I-enjoy + rock your own world, I realize their ease, intrinsic motivation, and unfuckableness are all factors. And let me just say that I’ve really outdone myself here. Because I’ve cleared all the roadblocks for you to have a deep, satisfying, grounding, nourishing, delicious AND health-conscious plate of pot pie TONIGHT for dinner.
As for time, you’ll need about an hour to pull this one together, but only 30 minutes or so are active time. The rest is all allowing this baby to bake to a perfect golden brown. So, about the same amount of time you’d need to get DoorDash to order + deliver something to you, pretty much no matter where you live. (Only you’ll have the most delicious leftovers for at least a day here, so winning.)
The ingredients are all things that you can nab in a quick tour through the front of the grocery store PLUS that store-bought puff pastry crust that I told you to put in your freezer months ago to make the pizza, remember (maybe you were extra smart and bought two!) But ultimately, grab a rotisserie chicken, a couple of easy veggies, the rest of last night’s bottle of wine, and you’re SET.
If motivation is what you’re needing, just look at this thing?! How can pot pie NOT be what you’re into? (Note: if you’re seeking additional motivation as to why buying a Marie Calendar’s frozen pot pie is not a reasonable way to direct your motivation drop me a line and I’ll talk to you about what the interesterified oils that make up the “chicken flavor” they add are. Shiver.)
And as for fear of messing up, it’s literally impossible to do. Because your rotisserie chicken is already roasted to perfection by your trusted grocer. And all you need to do is sauté some veggies while sipping a glass of said wine and VOILA!

As I hope you’re starting to internalize, EVERYTHING EVERYTHING is a medicine, a remedy. Everything is “good for us,” in moderation. The thing that determines the amount of benefit, the amount of the medicine we need, is the context.
Travel is incredibly stressful on the body + brain, in all sorts of ways that we barely acknowledge. The movement itself is deeply disorienting to our insides. Changing climates, time zones, moving at extraordinary paces – whether it’s 80mph in a car or 400mph on a plane – is really much more than our bodies want to do in a day.
Travel kicks up vata, the air and ether elements in our bodies. And the way that we can rebalance is with grounding foods and practices. Like doing some deep breathing. Putting our bare feet on the ground. Laying on the floor and giving a big sigh. And, eating a nice plate of pot pie.
The springy fennel, pea and fresh herb combination you’re about to enjoy is the most delightful pot pie filling I’ve ever experienced, and the flaky, puffy crust is comforting without being a heavy blanket. Roasted chicken, alliums and a little simple seasoning are all you need to feel that the world is right again, and you, in it.
And tomorrow, when you’re feeling settled in your place with suitcases unpacked, you can have a salad again. But on a travel day, or any day when you need a little deep, homey grounding, there’s this Easy-Peasy Rotisserie Chicken Pot Pie.
