I love recipes like this, that are as decadent as they are powerful for our bodies; delivering important nutrients in a little shape that makes us feel like we are doing something good for ourselves in a very special way (we are!)
These little truffles are really truffles, just without the refined-sugar part. The base is made from a combination of protein-rich nuts and seeds that soothe our bodies, help us to recover and to fuel. The chocolate coating is a bit of a cheat, made with raw cacao powder whose bitter flavors help us to reduce inflammation, balance our digestion, and detoxify. I notice that I crave them after a particularly long bike ride or strenuous trail run, but I’ve also been known to nibble on them while standing at the fridge deciding what to have for breakfast.
I don’t imagine that this one will take much convincing, besides to say that it’s easier than it looks, more healthful than it looks, and also easier to make with whatever you have on hand than any recipe would ever let on.
