I LOVE the method with this salad – it’s so easy. Everything on a sheetpan! If you don’t have a hoard of delicata squash leftover from the harvest as I do (!!) you can use butternut squash, kabocha pumpkin or another squash – just be sure to peel it before roasting! OH! And the halloumi is NOT TO BE MISSED here. The golden cheese croutons are literally to die for.
