The Easiest Hazelnut Date Bark

If you’ve been following along for more than a minute, you know my undying love of dates. I’m not even kidding when I say that I order them by the 15# box, and that the presence of such a hefty quantity gives me great comfort. If the sky falls tomorrow, at least we would have dates.

There are so many things that dates *do* for us, that when I saw Date Bark going viral all over the interwebs I think I said aloud “of course. Dates do everything else…why not be bark?” And it’s true. Dates make a pretty baller bark that’s perfect for snacking on when you want something sweet, but insist that your treat has superpowers as well.

As we left for our long holiday weekend travels, I was looking for a snack that would be sweet and sensible – for the drive, and for nibbling through the week as we were away from home and surely would have some afternoon stretches where a snack was in order. This date bark traveled easily, and almost *almost* replaced the nightly piece of chocolate I keep locked up in my heart.

This date bark

There are lots of ways to spin a recipe like this (see the recipe notes below for the why on this iteration and the special ingredients that I think take it over the top,) but this one is mine. The texture here is similar to a Snickers bar; a little bit crunchy, a little bit gooey, and full of flavor and ingredients that your body recognizes and needs. You don’t need any special equipment, and the whole recipe comes together in just a few minutes (save for the chilling time before you break it into chunks and eat it on the spot, and you WILL.)
