Candied Sesame Tahini Cookies

Quite simply, a perfect, chewy smart little cookie.

Not everything requires a big production, ya know? Sometimes you just need SIMPLE. In fact, Ayurveda would argue that all you need EVER is simple. And so on a full week, where what we needed was straightforward nourishment, that didn’t require a lot of pomp, circumstance, discussion, explanation, or even more than one bowl, these Candied Sesame Tahini Cookies came to the rescue.

And I hope they come to your rescue too!

As if you need a good excuse to make yourself these sweet, smart little cookies, tahini is a superfood from an Ayurvedic perspective. It’s particularly helpful for grounding vata dosha (something all of us, especially we athletes need a bit more of, especially on big, busy weeks.) Additionally, sesame is a wonderful warmer and helps keep digestion fluid, keeps the abdomen cozy, is wonderful for building blood and plasma, strengthens muscles, promotes fertility, breastmilk production, athletic recovery…need I go on?

…are chewy, soft and a little crunchy on account of the quick-candied sesame seeds you’ll make in like two seconds. (Ok, 3 minutes but still!)

All you’ll need for this one is a single bowl and a few ingredients that I hope you have on hand – if so, you’re really running an Ayurvedic pantry now! The one exception to this rule is the almond extract, which is something that I highly recommend picking up if for no other reason than simply to make these cookies on repeat.

These cookies are already vegan, dairy free and gluten-free – not because there’s anything wrong with butter, eggs, or gluten but because…they just are. I love stuffing them in my pack for a ride, or a big hike, they’re a favorite 4pm mindful snack, or a treat when I get home from a workout before I have time to make lunch. Even little Leo loves having little nibbles (though I typically leave the candied sesame off of the bites he inherits.)
